"Serve fresh young food and mature drink" is an old Irish proverb that is reflected in your cookery weekend or special cookery courses in Berry Lodge.
The main recipe will have you using mussels and salmon, mint and sorrel, duck and lamb, buttermilk and cheeses, and a dash of Guinness, Mist and Mead to enhance the flavours. We deliberately keep our numbers to ten and under so that you our guests will gain maximum benefit from the tuition in the relaxed traditional
homely atmosphere of Berry Lodge.
Our Cookery Programmes/ Holiday Cookery
This exciting programme will begin with a welcoming dinner where you will be introduced to your host and teacher Rita. After a leisurely breakfast
and a walk by the sea we will introduce you to the days menus. You will have an active part in making and cooking your own dishes, following Rita's instructions and suggestions. Our morning and evening's work will be tasted together with appropriate drinks and lively discussion at lunch or dinner each day. Partners or friends are always welcome to stay and enjoy half-board accommodation and even sample the fruits of your labour. We take account of individual ability and the level of experience of the cook and
we will consider this when we are developing our programmes. Courses can be residential or non-residential and depending on the topics selected we can cover up to 16 dishes during the two days of cookery and 8 dishes at the weekends. Recipe folders will be provided so that you can follow the dishes when making them at home.
Special Cookery Programmes
We are now introducing a novel cookery idea of Let’s have a Party
where you and your friends can prepare the food and party as well.
We are also introducingTeam Development through Cookery. This is a
day’s programme for groups within a company or school to come together, release
their minds from everyday work and together as a team provide a lunch or dinner
as part of Business Focused Action Learning.
