The best seafood dishes are those that require least effort. That means of course that the fish must be absolutely fresh and seasonal. Seafood is always changing and is dependent on the weather, good weather means lots of fish and bad means much less. A lot of people are afraid of cooking fish and that is a pity. This fish cooking day helps you recognise good quality, how to buy confidently and know the different species. It is important to look for bright eyes, red gills, shine and firmness of flesh but if you haven't seen these it is hard to know what we are talking about. To accompany the fish we will make such basics as the lightest Tempura batter, Beurre blanc, Rich Tomato Sauce, Pesto, Cocktail sauce and much more.
